Thanksgiving morning I’m out the door early for a turkey trot, and I come back starving with a long day of cooking ahead. Breakfast has to hold me until a 4pm dinner without slowing me down in the kitchen. Most of these lean on eggs, Greek yogurt, or cottage cheese for exactly that reason. A few are pure holiday treats.
1) Dutch Baby Pancake

A Dutch baby puffs up dramatically in the oven and looks like way more work than it is. The batter is just eggs, milk, and flour blended together. Pour it into a hot cast iron skillet and bake for about 20 minutes. Top with berries, lemon, and powdered sugar.
2) Everything Bagel Breakfast Casserole

Torn bagels, eggs, cream cheese, and everything seasoning bake into a savory casserole that’s perfect for a crowd. Assemble it the night before and pop it in the oven in the morning. Add smoked salmon or ham for extra protein. It’s the breakfast my family asks for every holiday.
3) Sausage and Cheddar Breakfast Casserole

Browned sausage, sharp cheddar, eggs, and bread cubes in 1 dish. It’s hearty enough to keep everyone full until the afternoon. Make it the night before so the bread soaks up the eggs. A square easily packs 20 grams of protein.
4) Frosted Cinnamon Rolls

Thanksgiving morning is the one day I make cinnamon rolls from scratch. The dough rises overnight in the fridge, so all I do in the morning is bake and frost. Cream cheese frosting is a must. Pair one with eggs so you’re not running on sugar alone.
5) French Toast

Thick slices of brioche soaked in eggs, milk, and cinnamon, then cooked until golden. I add a scoop of vanilla protein powder to the custard for a boost. Top with berries and a drizzle of maple syrup. It’s a classic for a reason.
6) Crepes

Thin, delicate crepes are easier than they look once you’ve ruined the first one, which everyone does. I fill them with sweetened Greek yogurt and berries. The batter rests overnight in the fridge. Roll them up and dust with powdered sugar.
7) Waffles with Strawberries

Crispy waffles topped with fresh strawberries and whipped cream. I use a protein pancake mix for the batter. Keep finished waffles warm in a low oven while you make the rest. A dollop of Greek yogurt on top works as well as whipped cream.
8) Egg Muffins

Eggs, vegetables, and cheese baked in a muffin tin. They’re perfect for grabbing on the way out the door to a turkey trot. Each one has about 7 grams of protein. Make a batch on Wednesday and reheat them Thursday morning.
9) Spinach Feta Omelet

A quick omelet with spinach and feta takes about 5 minutes. Three eggs give you nearly 20 grams of protein. It’s light enough to leave room for the big meal later. Serve with a slice of toast.
10) Buttermilk Biscuits

Flaky, buttery biscuits are a holiday morning staple. I split them and fill them with scrambled eggs and sausage. Make extra because they’ll be gone by noon. Freeze the cut biscuits and bake them straight from frozen.
11) Savory Oatmeal with a Fried Egg

Oatmeal doesn’t have to be sweet. Cook it in broth, stir in Parmesan, and top with a fried egg and greens. It’s warm, filling, and high in protein. It’s my go-to after a cold morning run.
12) Overnight Chia Pudding

Mix chia seeds with milk and Greek yogurt the night before and wake up to breakfast. Top with berries and a drizzle of honey. It’s light, make-ahead, and easy to portion. Great for anyone who wants something cold and quick.
13) Yogurt Parfaits

This is what I eat while everyone else is still asleep. Greek yogurt, granola, and berries layered in a glass take about 2 minutes. A cup of Greek yogurt alone is close to 20 grams of protein. Make a tray of them on Wednesday night and they’re ready to grab.
14) Smoked Salmon Bagels

No stove, no pans, and nothing to clean before the real cooking starts. Toasted bagels get a swipe of cream cheese, a few slices of smoked salmon, capers, and red onion. The salmon brings protein and healthy fats. It’s my favorite thing to eat standing at the counter.
15) Pumpkin Bread

I bake a loaf on Wednesday so Thursday morning is one less thing to think about. Half the oil gets swapped for Greek yogurt, and it stays incredibly moist. Toast a thick slice and spread peanut butter on top. Coffee in the other hand.
16) Blueberry Muffins

Bakery-style, with big domed tops and a crunchy sugar crust. The secret is a hot oven for the first 5 minutes, then turning it down. Greek yogurt in the batter keeps them tender for days. They travel well if you’re heading to someone else’s house.
17) Eggs, Pancakes, and Sausage

Some mornings call for the full diner plate, and Thanksgiving after a 5K is one of them. Scrambled eggs, a short stack, and a few sausage links cover protein and carbs in one sitting. I use a protein pancake mix so the stack pulls its weight. Real maple syrup only.
18) Poached Eggs with Bacon and Polenta

Creamy polenta topped with poached eggs and crispy bacon. It’s an elegant brunch dish that comes together fast. The eggs and bacon bring plenty of protein. Finish with Parmesan and black pepper.
19) Coddled Egg Jars

This is my copycat of the famous Eggslut jar: silky mashed potatoes on the bottom, an egg on top, and the whole jar cooked gently until the yolk is just set. The Instant Pot makes a batch of them at once. Stir it all together and scoop it up with toasted baguette. Add crumbled bacon to the potatoes for more protein.
20) Breakfast Tacos

Chorizo, scrambled eggs, and cheddar in warm corn tortillas is how we fuel up before the turkey trot. Everything cooks in 1 skillet in about 10 minutes. A spoonful of salsa and some avocado finish them. Plan on 3 per person, at least.
21) Avocado Toast with Poached Egg

When I want something light that still has staying power, this is it. Smashed avocado, a poached egg with a runny yolk, and a sprinkle of chili flakes on good toast. The egg and healthy fats keep me going until the afternoon. Poach the eggs in a wide pan so they don’t crowd.
22) Cottage Cheese Bowl

Cottage cheese is one of the best high-protein breakfasts out there. Top it with fruit, nuts, and a drizzle of honey for something sweet. Or go savory with tomatoes, cucumbers, and everything seasoning. A cup has about 25 grams of protein.
23) Rolled Omelet with Chives

A French-style rolled omelet is soft, custardy, and done in about 3 minutes. Low heat and constant stirring are the whole technique. Finish it with chives and a little olive oil. Three eggs land you right around 18 grams of protein with plenty of room left for dinner.
24) Breakfast Burrito Bowl

Everything you love about a breakfast burrito in a bowl. Scrambled eggs, black beans, potatoes, salsa, and cheese. It’s high in protein and keeps you full for hours. Prep the potatoes and beans the night before.
25) Baked Eggs with Bread

Crack eggs into a skillet of warm tomato sauce or cream, scatter herbs and cheese, and bake until the whites set. It’s a no-flip, low-stress way to cook a dozen eggs at once. Crusty bread for dipping is the best part. The whole pan serves 6 easily.
26) Cinnamon Streusel Coffee Cake

A tender coffee cake with a thick cinnamon streusel topping. Bake it the day before and serve it with coffee in the morning. It’s a holiday tradition in my house. Pair it with eggs for a balanced breakfast.
