Sunday is my long training day, and I’m not cooking much after it. So the slow cooker gets loaded at 8am and dinner is waiting when I walk in at 6pm. Most of these lean on cheap, tough cuts that turn tender and leave enough for lunch the next day. Set it and go lift.
1) Chicken Chili Verde

Salsa verde, chicken thighs, white beans, and green chiles go in the pot and that’s about it. The thighs shred right into the sauce after 6 hours on low. It’s one of the leanest chilis I make and still tastes rich. Top with Greek yogurt, cilantro, and a squeeze of lime.
2) Slow Cooker Pork Roast

A pork shoulder roast is one of the best deals at the meat counter. Rub it with garlic, paprika, and brown sugar, set it on a bed of onions, and let it go for 8 hours. It comes out tender enough to slice or shred. Leftovers turn into tacos, sandwiches, and rice bowls all week.
3) Classic Pot Roast

This is the Sunday dinner I grew up on. A chuck roast braises low and slow with carrots, potatoes, and a splash of red wine until it falls apart. It’s a big hit of protein that feeds a crowd. Spoon the cooking juices over everything before serving.
4) White Bean Tomato Rosemary Stew

Proof that a plant-based dinner can still fill you up. White beans, crushed tomatoes, garlic, and fresh rosemary simmer into a thick, rustic stew. The beans carry the protein and fiber. Stir in Italian sausage if you want it meatier.
5) Crockpot Shredded Chicken

I make this almost every week, and it’s the base for half my meals. Chicken breasts cook in broth and seasonings, then shred in seconds with 2 forks. Each serving has around 30 grams of protein. Use it in tacos, salads, wraps, or straight out of the container after a workout.
6) Beef and Butternut Squash Chili

Butternut squash makes this chili a little sweet and extra hearty. Lean ground beef and kidney beans keep the protein high. I like it with a dollop of sour cream and some crushed tortilla chips. It freezes perfectly for busy weeks.
7) Kalua Pork Sliders

Smoky, salty pulled pork with just a few ingredients. Pork shoulder, sea salt, and liquid smoke do all the work over 10 hours. Pile it on Hawaiian rolls with a little slaw. It’s a game day favorite that doubles as easy dinner.
8) Pork Carnitas Tacos

Carnitas get tender in the slow cooker, then crispy under the broiler. Orange juice, cumin, and garlic give the pork its flavor. I make a big batch and eat tacos twice that week. Top with onion, cilantro, and lime.
9) Beef Bourguignon

A French classic made easy in the slow cooker. Beef chuck, bacon, mushrooms, and red wine braise until the beef is fork-tender. Brown the beef first for the deepest flavor. Serve it over egg noodles or mashed potatoes.
10) Red Beans and Rice

Red beans, andouille sausage, and the Cajun trinity of onion, celery, and peppers cook down into something rich and smoky. Between the beans and sausage, it’s a solid source of protein. It’s cheap enough to make every week. Serve over white rice with hot sauce on the side.
11) Chickpea Curry

This is my favorite meatless dinner. Chickpeas, tomatoes, coconut milk, and curry spices come together into a rich, warming curry. The chickpeas provide plant protein and fiber. Warm naan for scooping is non-negotiable at my table.
12) BBQ Pork Loin

Pork loin is lean and stays juicy when it cooks low and slow in barbecue sauce. Slice it thick for dinner or shred it for sandwiches. It’s one of the leanest cuts you can throw in a slow cooker. I like it with roasted sweet potatoes and coleslaw.
13) Chicken Cacciatore

Chicken thighs, peppers, mushrooms, and tomatoes simmer into a rustic Italian stew. Bone-in thighs give the sauce more flavor. It’s hearty without being heavy. Roasted potatoes or a pile of pasta both work underneath.
14) Braised Short Ribs

Short ribs are the most luxurious thing you can make in a slow cooker. They braise in red wine and beef broth until they slide off the bone. Serve them over mashed potatoes with plenty of sauce. Save this one for a weekend when you want something special.
15) Shrimp Étouffée

Let the roux, trinity, and spices cook low all afternoon, then stir in the shrimp at the end. Shrimp only needs about 15 minutes, so they stay tender. It’s lean protein in a rich, spicy sauce, and white rice underneath is all it needs.
16) Butternut Squash Broccoli Curry

A cozy, colorful curry full of butternut squash, broccoli, and coconut milk. Add chickpeas or chicken for more protein. The squash melts into the sauce and makes it extra creamy. Finish with fresh cilantro.
17) Teriyaki Chicken

Better than takeout and way cheaper. Chicken thighs cook in a simple homemade teriyaki sauce, then I thicken the sauce at the end. Serve over rice with steamed broccoli. Each bowl packs a lot of protein for very little effort.
18) BBQ Chicken Sandwiches

Chicken breasts cook in barbecue sauce until they shred easily. Pile the chicken on toasted buns with pickles and slaw. It’s a lean alternative to pulled pork. The leftovers are great over a baked potato.
19) Smoky Baked Beans

Slow-cooked baked beans with bacon and a little brown sugar. They’re a great side for barbecue, but I’ll eat a bowl as dinner with some grilled sausage. The beans give it plenty of protein and fiber. Make extra because they disappear.
20) Pulled Pork Rice Bowls

Shredded pork over rice with greens is my favorite way to use up slow cooker pork. Add a drizzle of barbecue sauce or a spoonful of salsa. It’s an easy, high-protein lunch to pack for the week. Swap in brown rice for more fiber.
21) Slow Cooker Italian Meatballs

I roll a double batch of beef and pork meatballs, brown them fast, and let them finish in marinara for 4 hours. They come out tender and soaked through with sauce. A plate of 4 or 5 meatballs is an easy 30 grams of protein. Spoon them over pasta, polenta, or a hoagie roll.
22) Birria Bowls

Birria is beef braised in a rich chile broth until it falls apart. Instead of tacos, I serve it in bowls with rice, avocado, and the broth spooned over the top. It’s loaded with protein and flavor. Save some broth for dipping.
23) Chicken Thighs in White Wine

Chicken thighs, garlic, and white wine make a simple but elegant dinner. The sauce reduces into something you’ll want to soak up with bread. Thighs stay juicy even after hours in the slow cooker. Pair with green beans or a simple salad.
24) Pozole Rojo

Pork shoulder and hominy in a deep red chile broth. The slow cooker makes it nearly effortless. Set out toppings like shredded cabbage, radishes, and lime. It’s a perfect dinner for a cold night.
25) Chicken Curry with Yellow Rice

A mild, creamy chicken curry that the whole family will eat. Chicken thighs simmer with onions, garlic, ginger, and curry powder. Serve it over turmeric-spiced yellow rice. It’s an easy way to get a lot of protein into a comforting meal.
26) Pinto Beans and Chile Lime Rice

Slow-cooked pinto beans are cheap, filling, and full of plant protein. I cook them with onion, garlic, and a smoked ham hock for flavor. Serve them over chile lime rice. Top with cheese and salsa.
27) Barbacoa Tostadas

Barbacoa beef braised with chipotles, garlic, and cumin until it’s fall-apart tender. Pile it on crispy tostadas with guacamole. The beef carries plenty of protein. Leftover barbacoa freezes beautifully.
